Surprise Your Sweet by Making “Just Because” Chocolate Amaretto Cupcakes
As it is the season of ‘Love,’ chocolate has always been the key to my heart and really to everyone’s hearts (that I know of!) Therefore, our Chocolate Amaretto Cupcakes will definitely set you off on a good note with your partner, they certainly do the trick when it comes to my husband. So show the special him or her that they’re your ‘always’ Valentine and that you don’t need set holiday to share your love.
Here is how you make my delicious Chocolate Amaretto Cupcakes with Chocolate Amaretto Ganache.
Servings: 16 Cupcakes
Preparation Time: 35 minutes
Baking Time: 20 minutes
Chocolate Amaretto Cupcakes;
1 cup Butter (at room temperature).
3 ½ tsp Amaretto Liquor
1 1/2 cupsPlain Flour
1 cup Cocoa Powder (I like to use over 70% Cocoa)
Pinch of Salt
4 Free Range Organic Eggs
2 tsp Baking Powder
Chocolate Amaretto Ganache:
1/2 cup Chocolate (I like to use over 70% Cocoa Solids)
3/4 cup Heavy Cream
1 ½ tbsp. Unsalted Butter (at room temp cut up)
1 ½ tsp Amaretto
Set your oven to 180C and line a cupcake baking tray with paper cupcake liners. As it is Valentine’s Day coming up, I thought it would be fitting to use heart covered cupcake liners.
In a clean, dry bowl add your butter and beat continuously for 5 minutes, until the colour of the butter changes from a yellow colour to a pale cream colour. This means that the butter is fully aerated and ready for the next step.
Pour in your sugar and beat again until fully incorporated.
Add in your eggs one at a time, ensuring that the whole egg has been well mixed in before the next addition of egg.
Add your Amaretto and mix well.
In a separate bowl, add in your dry ingredients these include; flour, baking powder, salt and cocoa powder and stir with a spoon.
Now, add in your dry mixture 1/3 at a time into your wet egg mixture and fold the ingredients together. Once you have added all of your dry mixture to your wet mixture, your batter is ready.
Pour your batter into the cupcake liners until they are 2/3 full. This will leave enough space for the cupcakes to rise in the oven without any overspill.
Place your cupcakes in the oven to bake for 20 minutes, until they spring back to the touch or you can insert a skewer into the centre of the cupcakes and remove it without any batter on it.
Once your cakes are done, remove them from the oven and leave to sit in their baking tin for 5 minutes.
Once these 5 minutes are up, remove your cupcakes and place them to cool fully on a wire cooling rack.
Whilst your cupcakes are cooling, this will give you the perfect amount of time to make your chocolate amaretto ganache.
Chop up your chocolate and place it in a large metal bowl or a heat proof glass bowl.
In a small saucepan, add in your heavy cream and butter and melt them together.
Bring the butter and cream to the boil. Once it boils, remove from the heat and pour over your chocolate.
Leave to sit for 5 minutes.
After 5 minutes and the chocolate has nearly melted, begin to stir the mixture until the chocolate has completely melted.
Add in the Amaretto and stir again.
Leave your ganache to cool, once it has reached room temperature, either pour onto your cool cupcake bases or set in the fridge. Once the ganache cools below room temperature, it will thicken and become easy to pipe.
Decorate with hearts or flowers, or anything ‘love’ related!
