What’s The Beef with Wylie Dufresne Never Offering a Burger On His Menu, Till Now…
HOW CAN THIS BE?! Chef Wylie Dufresne known for gastronomy and some of the most innovative dishes, has NEVER offered a burger on his menu… at ANY of his restaurants! Gasp! So, what’s the beef? (Literally).
“Ever since Alder’s inception we’ve been riffing on pub food and trying to make it our own. We’ve been having fun with pub cheese, pigs in a blanket, and other bar foods and it was time to bring that to a burger.”- Wylie
Well, we’re willing to put the past behind us for a chance to sink our teeth into the first burger to ever be introduced to one of his menus with the launch of ‘The Burger’ offered at Alder this week. Available in limited quantities nightly– ‘from 6 to 86′ (6pm until sold out). The Burger (because what other burger is there?!) features a combination of chuck and brisket from La Frieda (duh!) with shio kombu ground into the mix (the kombu is cooked in sake and tamari and gives the burger an added element of umami), on a Martin’s potato roll and topped with house-made beer cheese crafted with Greenport Harbor Brewing Harbor Ale, and it comes with spears of half-sours from The Pickle Guys. Hey, those are my neighbors– Hi Pickle Guys.
The Burger is available at the bar only ‘from 6 to 86′ on Sundays through Thursdays for $13. The All-In Burger option is available for $21 and includes the burger, half an order of French Onion Soup Rings and a glass of Harbor Ale. We repeat.. FRENCH ONION SOUP RINGS. I’m guessing this will be a cronut type of situation, so if you want to have a chance to try this juicy looking set of buns, make a reservation stat! Personally, we’re extremely excited to try the The Burger with a side of Wylie pizzaz..or anything from Wylie…or any burger. Now I’m just hungry.
